10 years after I cooked at Mr. Mosimann's 50th Birthday held at the Natural History Museum of London. I was then invited to be a guest at Mr. Mosimann's 60th Birthday held at the Dorchester in London.

My first restaurant - Letizia's Cafe Bar Restaurant - multi level restaurant in the Shepparton CBD featuring 100 year old cellar that seated 80, a cafe area seating 50 & a Blues bar called the Attik featuring live music.

Bonsai Mist
Bonsai mist - I created this dish as a petit four. You pick the chocolate truffles from the chocolate tree. As in nature we have seasons so this is Spring i.e., the leaves and the birds nest with little chocolate eggs.

I love making the butterflies - they should look like blown glass (these are made from sugar).
Curtis in the Attik
Mr. Curtis designed and painted the Hendrix mural in the Attik. He has his own business and is a skilfull artist.
